Forget Ordinary Salads: This Chicken, Egg and Pineapple Combination Changes the Game

A combination of chicken, boiled eggs, cheese and garlic can turn a handful of everyday ingredients into a filling homemade salad.

The recipe is particularly straightforward because it requires no complicated cooking techniques. Its appeal comes from the contrast between the creamy ingredients, savoury chicken, sharp garlic and the sweetness of pineapple.

What you need to prepare the salad

The recipe serves as a layered salad built around cooked chicken and eggs.

You will need 200 grams of cooked chicken fillet, four chicken eggs and 150 grams of semi-hard cheese. Add two fresh garlic cloves and between 100 and 150 grams of canned pineapple pieces.

For the creamy element, use three tablespoons of mayonnaise or thick Greek yogurt. Salt and freshly ground black pepper can be added according to taste.

A small amount of paprika or fresh herbs can be used to finish the dish.

Start by preparing the chicken

The chicken forms the foundation of the salad and should be fully cooked before assembly.

Place the chicken fillet in salted water and boil until thoroughly cooked. Once done, allow it to cool completely before cutting it into small cubes.

Alternatively, the cooled chicken can be pulled apart into thin fibres. Either preparation works well for creating an even bottom layer.

Boil and grate the eggs

The eggs should be cooked until firm enough to grate.

Place them in boiling water and cook for approximately eight to nine minutes after the water reaches a full boil. Transfer the eggs immediately into cold water once they are done.

After cooling, peel the eggs and grate them using the coarse side of a grater.

This creates a light texture that works well with the denser chicken and cheese layers.

Choose a cheese with enough flavour

The cheese is another important part of the salad because a mild variety can easily disappear among the other ingredients.

A semi-hard cheese with a noticeable buttery flavour is recommended. Grate it using a coarse or medium grater so that it remains distinct when combined with the other layers.

Prepare the garlic without making the salad watery

Garlic provides much of the sharpness in the dish, but its preparation can affect the final texture.

Instead of putting the cloves through a garlic press, finely mince the two peeled cloves with a knife.

Pressing garlic releases more liquid, which can contribute unwanted moisture to the salad. Finely chopping it helps preserve the fresh garlic flavour while keeping the mixture firmer.

Build the salad layer by layer

Once all the ingredients have been prepared, the salad can be assembled.

Begin with the chicken at the bottom of the serving dish. Add the grated eggs as the next layer, followed by the cheese mixed with the minced garlic.

Scatter the pineapple pieces over the top and lightly coat the layers with mayonnaise or thick Greek yogurt.

Season the layers lightly with salt and freshly ground black pepper as you assemble them, taking care not to over-season the dish.

Pineapple brings balance to the garlic

The addition of pineapple gives the salad a noticeably different character from a traditional garlic-based dish.

Its natural sweetness helps soften the sharpness of the garlic while adding a fresh contrast to the savoury chicken and cheese.

The amount can be adjusted depending on how prominent a sweet flavour is desired. Between 100 and 150 grams provides enough pineapple to create the contrast without overwhelming the other ingredients.

Serve the salad immediately

Unlike some layered salads, this dish does not require several hours in the refrigerator before serving.

Serving it immediately allows the individual ingredients to retain their separate textures, while the freshly chopped garlic maintains its stronger aroma.

A small sprinkling of paprika or some fresh herbs can be added just before serving for extra flavour and presentation.

A lighter alternative to mayonnaise

For a less rich version, mayonnaise can be replaced with thick Greek yogurt.

A small amount of mustard mixed into the yogurt can add some of the tanginess normally supplied by mayonnaise while keeping the dressing lighter.

The result is still creamy, but the overall salad has a fresher and less heavy finish.
