For the best texture, the assembled cake should be refrigerated long enough for the individual components to bond together.

The Curd Cream Provides the Foundation

The creamy filling starts with 500 grams of curd cheese containing between 5 and 9 percent fat.

The cheese is passed through a sieve or blended until smooth before being combined with three tablespoons of 20 percent sour cream, five tablespoons of sugar and 90 grams of softened butter.

Blending the ingredients thoroughly is important because a smooth mixture spreads more evenly between the cookie layers.

Butter also plays an important structural role, becoming firmer as the dessert cools.

Peaches Add Sweetness and Contrast

A can of peaches supplies the fruit component.

The peaches should first be removed from their syrup and patted dry before being cut into medium-sized pieces.

Keeping some of the fruit aside for decoration gives the finished dessert a more polished appearance.

Removing excess syrup is also useful because too much moisture can make the cream mixture unnecessarily loose.

Careful Layering Creates the Structure

The dessert is assembled in a plastic-wrap-lined mold.

Shortbread cookies form the first layer, followed by a generous but controlled amount of curd cream and then pieces of peach.

The layers are repeated until the ingredients have been used.

If the curd contains visible excess whey, it can be wrapped in cheesecloth and placed under a light weight for around 30 minutes before preparation.

Removing some of the excess liquid helps prevent the cream from becoming too fluid.

Room-Temperature Butter Helps Create a Smooth Cream

The butter should be softened to room temperature before it is mixed with the curd.

This allows it to emulsify more evenly and reduces the chance of small lumps remaining in the finished cream.

The mixture should be beaten until completely homogeneous before it is spread over the cookies.

A Controlled Amount of Cream Keeps the Layers Firm

Using too much cream between the cookies can make the structure unstable.

A thinner, even distribution allows the biscuits to absorb moisture gradually while keeping the layers properly supported.

This approach also helps prevent loose sections from developing inside the dessert, particularly when it is prepared ahead of serving.

The Final Turn Makes the Dessert Presentation-Ready

After sufficient refrigeration, the chilled cake is carefully inverted onto a serving dish.

The plastic wrap is removed, revealing the cookie layer that was placed at the top of the mold.

The reserved peach pieces can then be arranged across the surface, adding colour and emphasizing the fruit component of the dessert.

A Simple Combination With a Firm Finish

The dessert depends on a straightforward balance of ingredients: curd cheese supplies the creamy body, shortbread cookies provide the structural frame and butter helps the mixture firm as it cools.

With properly drained curd, softened butter, controlled cream layers and adequate refrigeration, the peach-and-shortbread combination develops the dense yet tender consistency that makes this type of no-bake dessert particularly suitable for neat serving.
