Using this recipe, you may build complex flavours by cooking each ingredient separately for approximately 10 minutes before combining them all and letting them simmer together. The paprika adds a whole new dimension of flavour, and the beef, depending on the cut, may become quite tender. Keep in mind that smoked paprika has a strong flavour and should be used with caution. Ingredients

  • 6 rashers 6 rashers bacon (cut into small pieces)

  • 1.5 kg boneless beef shoulder or shank cut into
    small cubes

  • 1 onion, chopped

  • 2-3 cloves garlic

  • 5 cups chickens stock

  • 3 tbsp. paprika

  • tsp salt

  • 3 tbsp. flour

  • ½ cup cold water

  • 1 cup sour cream

  • dark toasted almonds

Method

  • In a heavy pot, fry the bacon in some oil and set aside, then brown the beef before removing and adding to the bacon.
  • Saute the onions in the beef and bacon fat. Add garlic and cook for 30 seconds before adding the meat back.
  • Add chicken stock, 3 tablespoons paprika and 1½ teaspoons salt.
  • Cover and simmer slowly until beef is tender, about 1½ hours.
  • Now mix 3 Tablespoons flour with ½ cup cold water and 1 cup cream. Mix with the beef and cook until thickened, stirring constantly.
  • Taste for seasoning and add more salt and paprika if necessary.
  • Garnish with Almonds and serve with rice or noodles.
