The father of two reportedly made an odd remark to one of the journalists stationed outside his house, promising a quotation in return for discovering where she got her jacket.

‘I’ve had to get the kids some sushi for lunch, they adore it,’ he remarked.

‘I have to ask you where you got your jacket from, because everyone loves it, and it’s clearly the most significant thing going on, so if you tell me that, I’ll tell you anything.’

Ramsay, 46, allegedly attacked Mrs Coulston with a kitchen knife before a struggle occurred in which she managed to take the weapon from him.

The 46-year-old mother was supposedly on ‘all fours’ with Ramsay as they struggled for the knife, according to hero builder Peter Haramis, who raced to aid.

Mr Haramis said she managed to fling the blade to the tradesman, according to his testimony, which has yet to be proven in court.

‘He stared at me for a second and hesitated, giving her the opportunity to grab the knife,’ he said.

‘She flung the knife at me, and I grabbed it…’ “You’re not getting the knife,” I told the accused attacker.

On Monday afternoon, Ramsay ‘looked all ragged, with untidy hair and an out of control beard,’ according to Mr Haramis.

He’s a huge guy in a dark grey tracksuit, and he’s gained weight since that shot,’ Mr Haramis added, referring to professional images of Mr Ramsay in a suit.

The builder said in his witness testimony, which he gave with police, that the knife at the center of the event was roughly ‘ten inches long’ (25cm), and that it was his intervention that likely saved Mrs Coulston.

Ramsay reportedly left the scene, but video captured the moment police apprehended him at a traffic signal in the middle of Campbell Parade in Bondi Beach.

‘Get down on the ground,’ screamed an officer.

According to the video, Ramsay slid to the ground before being shoved into the road by a police officer.

Ramsay was a well-known person in the real estate market with over 20 years of experience who, according to an article from his previous company, Ray White, “had played a vital part in brokering some of Australia’s most high-profile transactions.”

He was in charge of selling Channel Seven’s Pyrmont offices for $180 million and Channel Nine’s landmark Willoughby headquarters for $147.5 million.

The 46-year-old also used be the director of the CBRE Residential Development Sites and lead a team which made about $1billion in sales per annum.
