Ingredients

  • 6 large sweet potatoes, boiled or roasted and cut in half along the length

  • 125 ml honey, warmed and softened

  • 65 ml oil

  • ¼ tsp ground mace

  • juice of 1 lemon

Method

  • Arrange the sweet potatoes in a greased casserole dish.
  • Combine the remaining ingredients in a bowl and pour over the potatoes.
  • Bak in the oven at 180¼ for 30 minutes. Baste occasionally with the juice in the pan.
  • Best served immediately.
