Ingredients

  • Chicken
  • 3 chicken breast fillets, chopped into chunks

  • 2 eggs, lightly beaten

  • ½ cup corn flour

  • ½ cup flour

  • ½ teaspoon salt

  • ½ teaspoon pepper

  • 2 teaspoons paprika

  • oil for frying

  • Sauce
  • ¼ cup soy sauce

  • ¼ cup rice vinegar

  • ½ cup honey (or brown sugar)

  • 1 tablespoon cornstarch

  • cup water

  • 2 teaspoons sesame oil

  • 2 tablespoons sesame seeds

Method

  • Chicken
  • Cut the chicken breasts into bite-sized chunks. Get 3 bowls ready.
  • Place the eggs in one shallow bowl and the cornflour in another bowl. In the third bowl, add the flour, salt, pepper and paprika and mix together.
  • Dip the chicken in the cornflour, then dip in the egg, and finally dip it in the seasoned flour.
  • Heat oil in a wok or large frying pan until very hot. Add the coated chicken to the frying pan and cook on high heat for 5-6 minutes, turning once or twice until cooked.
  • Remove chicken from the pan and place on kitchen towel.
  • Sauce
  • Add all the sauce ingredients to the hot wok or pan, stir and simmer on high heat for 2-3 minutes until the sauce reduces and caramelises.
  • Add the fried chicken back into the frying pan together with the sauce. Cook for 1-2 minutes.
  • Garnish with sesame seeds and chopped spring onion.
  • Serve with steamed rice or fried rice.
