SPICY MINI SAUSAGE ROLLS RECIPE

The fact that store-bought puff pastry can be used instead of making your own is the best part of this recipe. Use any kind of sausage meat you like, but boerewors will make this the most authentically South African snack you’ve ever had. If you find that Tabasco sauce is too watery for your tastes, try subbing in some fresh chilies that you’ve chopped or another brand of chilli sauce. If you’re feeling particularly daring, whip up some homemade chilli sauce to use as a dipping sauce. After baking, they become golden, flaky, and really delicious.

SPICY MINI SAUSAGE ROLLS RECIPE

INGREDIENTS

  • 400 g sausage meat

  • 1 clove garlic

  • handful of parsley, chopped

  • 2 tbsp. Tabasco® sauce

  • 375 g ready-rolled puff pastry

  • 1 beaten egg (to glaze the pastry)

METHOD

  • Heat oven to 200°C, or gas 6.
  • Place the sausage meat in a bowl with the garlic and parsley.
  • Mix well and add a chilli sauce.
  • Unroll the pastry onto a board and cut in half length ways.
  • Divide the sausage mixture in two and spread along the length of each pastry strip in a cylinder shape, leaving a 1 cm edge.
  • Tightly roll the pastry around the sausage meat and brush the ends with the beaten egg to secure.
  • Use a sharp knife to cut each roll into 10 pieces, each about 2.5 cm long, and place on a baking sheet.
  • Brush more egg all over the pastry.
  • Place in the oven and cook for 25-35 mins until the pastry is puffed and crisp and the meat has cooked through.
  • Remove and serve hot or cold.
