Ingredients

  • 1 cup black beans, cooked

  • 2 tsp extra virgin olive oil

  • 1 clove fresh garlic

  • 2 small red peppers, chopped, small dice

  • ½ tsp red chilli, flakes, chopped finely

  • 1 medium fresh chilli pepper

  • 1 small onion, chopped, small dice

  • 1 tsp cumin, ground

  • 1 medium green pepper, chopped, small dice

  • 2 medium tomatoes, chopped

  • 2 medium zucchini (baby marrows), chopped

Method

  • Heat oil in a heavy pot over a medium-high heat. Add onion and garlic. Cook until the onions soften.
  • Add peppers, chilli flakes, and zucchini, and cook until slightly softened.
  • Add the beans, tomatoes, and 1 cup water. Simmer until slightly thickened and the vegetables are soft, about 20 minutes. Serve warm with or without rice.
