We would always make cookies with Grandma during the summer break. If not healthy rusks, it was the crumbly crunchie recipe we all like. These traditional crunchies are crumbly and crunchy, and they don’t fall apart in your coffee as rusks do. They are not only fascinating to bake, but they also make an excellent baked present for family and friends. You most likely already have the ingredients on hand, so it’s time to get baking.

Not only do you have all of the ingredients on hand, but this easy dish is perfect for making with the kids over the summer vacation. The syrup is delicious and binds the mixture together, and if you want a chewy cookie, bake it for a few minutes shorter. Sprinkle with extra coconut when they’re ready to be removed from the oven. They will be done in about 30 minutes, but let them cool before serving with coffee, tea, or as a midnight snack.

Cooking time: 25 minutes

Total time: 35 minutes

Ingredients

  • 200g butter

  • 1 tbsp. golden syrup (or honey)

  • 2 cups oats

  • 1 cup coconut

  • 1 cup flour

  • 3/4 cup brown sugar

  • 1 tsp bicarb

Method

  • Pre-heat the oven to 180°C.
  • Mix the flour, oats and coconut in a bowl.

  • Melt the butter, syrup and sugar in a small pot.
  • When the butter starts to bubble add the bicarb and stir. Remove from the heat immediately.
  • Pour the butter mixture into the dry ingredients and mix with a spatula.
  • Using the back of a metal spoon, gently press the mixture into a greased baking tray (30cm x 20cm or similar depending on how thick you like the crunchies).
  • Bake for 15 minutes at 180°C, then turn the oven down to 160 C and bake for a further 10 minutes until golden brown.
