To assist the tomatoes simmer down until they are soft, a simple tomato sauce for spaghetti only takes around 40 minutes. Instead of using milk and Maizina to thicken your sauce, try adding some bechamel sauce (white sauce). Save some of the pasta water while straining it since it will help bond the sauce to the pasta when you combine the two. Add freshly grated parmesan cheese and chopped parsley to your spaghetti and tomato sauce as a garnish.

Ingredients

  • Spaghetti

  • 6 tomatoes

  • 1 large onion

  • 2 cloves garlic

  • 2 tbsp butter

  • ½ cup milk

  • 2 tsp sugar

  • 1 tbsp Maizina (heaped)

  • salt and pepper to taste

Garnish

  • parsley to garnish

  • parmesan cheese

Method

  • Finely chop the onion and fry until golden brown. Add garlic and fry for 1 extra minute.
  • Skin and cut up tomatoes and add to the onion. Add salt, pepper and butter.
  • Put on lid and leave to simmer for 30-45 minutes.
  • Then mix Maizena with milk and add to mixture, also sugar.
  • While sauce is simmering, put spaghetti required into boiling salted water and allow to boil fast for 20 minutes, stirring occasionally; strain and save some pasta water.
  • Add spaghetti to the sauce with ¼ cup pasta water, stir and leave to cook slowly for about 5 minutes.
